Making Yogurt

1 quart goat milk
1/3 cup powdered milk
yogurt culture

  • Place a quart of goat milk in a pan and stir in the powdered milk.  
  • Bring to a rolling boil while stirring.  
  • Boil the milk for 5 minutes (stir constantly).  
  • Let cool to 115 F.  
  • Place the yogurt culture or about 1/3 cup of plain yogurt into the mixture.  
  • Place in a yogurt maker for about 5-6 hours.  
  • The resulting product usually sets up to a nice semi-thick consistency.  

We have found that for the first few months after a goat has freshened, the yogurt has a tendency to not "set up".   As fall approaches, the milk begins to "set up" due to a change in the milk.   We have also discovered that if the milk is used from does that have milked through a year; the yogurt tends to set up well.
